Recipe: Smoked Salmon Quiche

A great, healthy quiche which should do about 4 meals. Well worth it. 

Ingredients

  • Ready roll shortcrust pastry (always seems to be on offer in Tesco)
  • 190ml semi skimmed milk (no more)
  • 3 eggs
  • Lots of cheese  (when you grate it in, a small mound should form!)
  • 150g smoked salmon
  • Salt and pepper

Method

1. Line a small round baking tin with baking paper.

2. Pop the pastry in, filling any gaps with more pastry.

3. Pour the milk into a large cup/bowl and add the eggs. Beat with a fork until everything is nicely combined. Add the chopped salmon and stir well. Season. 

4. Pour the milk mix into the baking tin and then grate the cheese in - spread it around with a fork so it is evenly distributed. 

5. Cook at 180 for 20 mins, then cover with tin foil and cook for 8 mins. Take the foil off and bring it right to the top of the oven to brown for 2 mins. 

6. Eat immediately, or cover with cling film and pop it in the fridge for later. I prefer it warm so suggest you cut a chunk and reheat it in the microwave.
