Want to impress your date this Valentine’s Day? Here are four romantic cocktails to get your fires burning – and one if you need to press the escape button.

The Caesar with Antica Sambuca Raspberry

Sambuca may not be the first drink you think of when it comes to romance, but this cocktail will certainly get you in the mood. Made with star anise and raspberries – two well-known aphrodisiacs – and packed with endurance enhancing ginger, the Caesar is the perfect cocktail with a kick to give your Valentine a warm glow.

40ml Antica Sambuca Raspberry
2 slices fresh ginger
5cm lemongrass
Squeeze of lemon juice
2 raspberries
120ml lemonade

Preparation

Muddle the ginger, lemongrass and lemon juice together, before adding the Antica Sambuca Raspberry and raspberries with ice. Shake and strain into a highball glass over ice, before topping with lemonade and garnish with orange peel and lemongrass.

Sophie Dahl’s rose prosecco

Roses are red, violets are blue, this cocktail’s guaranteed, to make your valentine want you. Prosecco, sweetness and roses – what better Valentine’s Day cocktail?

One bottle prosecco
4-6 tbsp rose syrup

Preparation

Pour the prosecco into serving glasses and then drizzle rose syrup on top, allowing it to trickle down to the bottom of the glass. Serve with rose petals.

It’s pretty rare to mix tequila with a cream-based drink, but this ultra-smooth cocktail is guaranteed to get your Valentine in the mood. The spirit cuts through the sweetness of the chocolate and raspberries, making this a naughty but nice treat.

2 oz tequila
1 oz white crème de cacao
1 oz double cream
½ oz Chambord
White chocolate flakes for the rim
Fresh raspberries

Preparation

Put the tequila, crème de cacao, double cream and Chambord in a cocktail shaker with ice and shake for 15 seconds. Pour into chilled cocktail glasses rimmed with white chocolate and garnished with raspberries.

Sparkling sweetheart

Put a little fizz into your evening with this fruit and fizz based cocktail. It’s so easy to make that you’ll have plenty more time to – ahem – get to know your date.

1 oz Alize Red Passion
2/3 oz peach puree
1/3 oz lemon juice
1/3 oz sugar syrup
2 oz prosecco

Preparation

Pour all ingredients into champagne flute and stir.

Chilli, ginger and coriander vodka

Things not going as well as you hoped? Want to get rid of that Valentine date? Spice up your evening (or blow your date away) with this chilli-infused vodka.

1 ¼ oz caster sugar
1 cm ginger grated
4 stems coriander
Lime
1 shot of vodka
Soda water and crushed ice
2 slices of red chilli

Preparation

Muddle the sugar, ginger, coriander and lime together in a tall glass. Add the vodka, fill with ice and top with soda and chilli.
