From carrot crisps to curried haddock to guacamole and chickpeas, needing to eat
So, make a couple of these for your gluten-less pals this week – sharing is caring, after all. Because who needs bread, really? Not us.
1. Almond and coconut balls
These almond and coconut balls really are a snack to make you feel good about yourself – and another upside is that they only take the melding together of four ingredients. Lovely stuff.
2. Carrot and sweet potato crisps
As tasty as any crisps you’d grab off the shelf. Why not try with our speedy guacamole, as seen below…?
3. Fajita potato skins
Kind of like your traditional baked potato, but with a distinct Mexican twist.
4. Curried haddock parcels
If you’re anything like us, you’re all about anything curry flavoured – including fish. And how good do these haddock parcels
5. Mexican salad jar
Back in Mexico for this vibrant lunchtime option. Get all your portions in one meal. Can’t say fairer than that.
6. Crispy colcannon skins
A yummy twist on the classic Irish potato dish, perfect for those chillier evenings.
7. Speedy guac
Eat with carrot and sweet potato crisps for a snack that’s so full of virtue you’ll hardly be able to stop telling people about it. Why not share instead?
8. Roasted spiced chickpeas
The crunch, the spice, the knowledge that you’re avoiding a snack that’s been drenched in oil and deep fried to within an inch of its life… yes, it’s fair to say that these roasted chickpeas are amongst our favourite snacks on this entire list. Yum and YUM.
Finally, a lovely accompaniment to whatever else you’ve got going on on your plate. We’d pair up with the curried haddock parcels if we were you…
