Pancake Tuesday is upon us and beyond an excuse to stuff our faces with pancakes, it can also be an opportunity to experiment around in the kitchen. Plus, pancakes can not only be sweet, but they are actually amazing with savoury flavours! Here are a couple recipes that have been proven to work well:Salmon, cream cheese and watercress
If you are crazy about salmon the way I am, then this classic combination will be perfect for you! Smoked salmon and cream cheese are soulmates in general and the watercress (or baby spinach, or any other greens you have on hand) adds in an extra crunch. Just add them to a pancake once you’ve flipped it over and fold it into a triangle.
2. Triple cheese
It works on grilled cheese, pizza and toasties, so there is no reason why it wouldn’t work for pancakes (or crepes). Just add your favourite combination of cheeses and let it melt on the pancake, before folding it in a triangle. I would suggest a combination of cheddar and red Leicester (for the flavour), and soft cheese (for creaminess).
Bacon, maple syrup, blueberries
There is nothing much to say about this classic combination. It is true though, that the crispy bacon combines beautifully with the sweetness of the maple syrup and the zest of the blueberries!
Chicken and mushroom
This one requires a bit more preparation, but it’s the ultimate comfort food, which deserves to be made every day of the year! Chop mushrooms and fry them in butter, or another oil of choice. Once they are cooked, add boiled chicken, stir well and spice it up with nutmeg, pepper, and chopped parsley. Roll up the pancakes with the mix, and place in an oiled tin. Top it off with grated mozzarella and bake for 5-10 minutes in a preheated oven (180C).
Feta, olives, tomatoes, basil
Feta goes amazingly well pancakes on its own, but it reaches flavour heaven when you add olives, and tomatoes. For extra points, use sun-dried tomatoes, if available. Garnish with fresh basil leaves
Of course, there are countless other variations for savoury pancakes, but these can just be the starting point to a savoury fiesta! Go wild!
